White Beans with Ham and Shrimp

White beans are just as popular as red beans in New Orleans. They are usually served as lunch specials on THirsday.


1 pound dried navy beans, washed, sorted, soaked overnight, and drained

6 cups water

1 smoked ham shank

3 bay leaves

1 large onion, minced

1 rib celery, minced

1 tablespoon minced garlic

Creole seasoning

1 15-ounce package dried shrimp

Hot cooked rice


Plce all ingredeints except shrimp and rice in slow cooker. Stir thoroughly. Cook on low until beans soften, 6 to 7 hours. During the last hour of cooking, remove bay leaves, add shtrimp, and remove ham shank; ct meat from bone and add back to slow cooker. Discard bone. Stir. Serve with cooked rice.
