Strawberry Granita Cava

The Ponchatoula Strawberry fesitval is this week. I want to share a couple of fresh strawberry recipes. Let's start off with a cocktail.
1 lime
1/2 teaspoon minced fresh rosemary
1/4 teaspoon salt
1 pint sweet Louisiana strawberries
1/2 cup apple juice
1/3 cup vodka
1 bottle chilled Cava or other sparkling wine
Zest and juice lime; combine 1/2 teaspoon zest and 1 1/2 tablespoons lime juice to a blender. Add rosemary and salt.
Rinse strawberries under cool running water and drain well. Trim and discard stems; roughly chop and place in blender with lime juice. Add apple juice and vodka; blend on high until smooth, adding extra liquid if needed. Pour into an 8-inch square baking dish. Place level in freezer and freeze for 2 hours; mix well and return to freezer for an additional 3 hours or up to 5 days. To prepare drinks, remove strawberry mixture from freezer; let stand at room temperature 10 minutes. Scrape entire mixture with a fork until fluffy and slushy, keeping resulting granita frozen until needed.
Chill 4 to 6 Champagne coupe glasses; spoon 2 tablspoons strawberry granita into middle of each glass. Slowly pour 2 to 3 ounces chilled wine around granita.
