Slow Cooker Macque Choux

Let's continue with a few more crockpot recipes. Here's a Cajun classic side side.


1 pound frozen white shoe-peg corn

1 1/2 pounds andouille sausage, cut into 1/4-inch half rounds

1 smoked ham shank

2 ribs celery, minced

3 bay leaves

Creole seasoning to taste

2 cups fresh or canned chopped tomatoes

4 cloves garlic, minced

1/4 teaspoon red pepper flakees

1 teaspoon dried thyme

1 large onion, chopped

4 green onions, chopped

Hot cooked rice


Place all ingredeints except green onoins in slow cooker, stir to combine. Cover and cook on low for five hours. Remove ham shank during the last hour of cooking; cut meat from the bone and chop; add meat back to low cooker. Discard bone. Add green onions during last 15 minutes of cooking. Serve over rice.
