Sherry-Tarragon Vinaigrette

With the summer heat coming, how about a couple of salad dressings this week? Homemade is so much better than store bought.


1/2 cup sherry vinegar

3 tablespoons chopped shallots

1/2 teaspoon salt

1/2 teaspoon ground black pepper

2 tablespoons chopped fresh tarragon

1 tablespoon Dijon mustard

3/4 cup olive oil


In a small bowl, whisk together vinegar, shallot, salt and pepper; let stand for 15 minutes. Whisk in tarragon and mustard. Gradually whisk in oil until mixture is smooth. Use immediately, or cover and refrigerate for up to 3 days.
