Here is a great seasoning for top of the stove boiling. It's perfect for boiling shrimp for shrimp remoulade.
1/4 cup lemon zest (about 8 lemons)
2 cups kosher salt
1/4 cup cayneen pepper
6 dried bay leaves, crumbled
2 tablespoons granulated garlic
2 tablespoons paprika
1 tablespoon granulated onion
1 tablespoon crushed red pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon dry mustard
1 tablespoon dried dill weed
Preheat oven to 350℉.
On a rimmed baking sheet, spread lemon zest.
Bake until dried, 3 to 5 minutes, stirring halfway through baking. Let cool.
In a medium bowl, stir together lemon zest, salt, and all remaining ingredients until combined.
