Salmon Croquettes

Here's a childhood favorite from my mom. I was always one of the first at the table when these were served.


Fry:

1 tablespoon minced onion

3 tablespoons margarine or butter

Blend in:

1/3 cup flour

Add:

1 cup of milk

1 well-beaten egg

Cook to thicken

Add:

1 teaspoon salt

1 tablespoon lemon juice

2 tablespoons sherry

1 can salmon

Allow to cool


Form croquettes; roll them in breadcrumbs. Roll in beaten egg mixed with a little water. Roll again in breadcrumbs. Refrigerate. Fry in deep fat fryer at 365 ℉.
