Louisiana Coffee Cake

Looking through my collection of cookbooks, I came across the official cookbook of the Louisiana World's Fair. I thought that this week, I would share two coffee cake recipes.


1/2 pound butter

1 cup sugar

3 eggs

1 cup sour cream

2 1/2 cups sifted cake flour

1 tablespoon baking powder

1 teaspoon baking soda

Pinch of salt

1 teaspoon vanilla

1 teaspoon lemon extract

1 cup toasted chopped nuts

1/2 cup sugar

2 teaspoons cinnamon

4 tablespoons butter


Cream together butter and sugar. Add eggs, q at a time, then sour cream, continuing to beat. Resift and gradually add 2 cups of the flour. Resift the remaining 1/2 cup of flour with baking powder, soda, and salt and fold into batter by hand. Food in flavorings. Pour half the batter into a greased and floured 8 1/2 x 12-inch pan.

Combine nuts, sugar, and cinnamon. Sprinkle half of this mixture over batter in pan. Cover with remaining batter and sprinkle the other half of the nut mixture on top. Dot with butter. Bake at 350℉ for 30 minutes. Cool in pan, refrigerate, and reheat when ready to serve.
