Easy Red Beans

Just the other day, a friend was looking for crock pot recipes. Noticing that I didn't have many on my website, I thought I would remedy that over this week and next.


2 tablespoons bacon drippings

1/2 pound smoked sausage, cut into small pieces

2 onions, minced

2 cloves garlic, minced

2 aby leaves

3/4 teaspoon dry thyme

Creole seasoning to taste

1 pound dried kidney beans, washed, sorted, soaked overnight, and drained

5 to 6 cups water

Hot cooked rice


heat bacon drippings in skillet set over medium heat, add sausage and brown solwly, about 20 minutes. Add onion and garlic, sauté until tender, about 10 minutes. Combine onion/sausage mixture, bay leaves, thyme, Creole seasoning, beans, adn water in slow cooker. Cover and cook on low for 8 to 10 hours until creamy. during last 20 minutes of cooking, stir frequently and mash lightly with spoon. Serve with rice.
