Here is an easy way to make the cliche dish, Shrimp Creole. The shrimp goes in for the last hour of cooking, to not overcook them.
1/2 cup butter or bacon drippings
1/3 cup flour
1 1/2 cups chopped onion
3/4 cup chopped celery
3/4 cup chopped bell pepper
1/2 teaspoon freshly ground black pepper
1/2 teaspoon white pepper
1/2 teaspoon cayenne pepper
2 bay leaves
1/2 teaspoon dried thyme
Creole seasoning to taste
1 cup tomato sauce
2 cups diced fresh tomatoes
2 pounds raw, peeled, deveined medium shrimp
1/4 cup chopped parsley
Hot cooked rice
Melt butter or drippings in a heavy-bottomed pan set over medium-high heat. Add flour and cook, stirring often, until a medium brown rouz is achieved, about 15 minutes. Add onion, celery, and bell pepper and cook, stirring occasionally, until vegetables are softened, 6 to 8 minutes. Add ground peppers, bay leaves, thyme, creole seasoning, and tomato sauce. Stir to mix and cook until fragrany, about one minute. Place contents of pan and tomatoes in slow cooker, stir, and cook on low for 4 hours.
Remove lid and stir well, scraping sides of crock. add shrimp and parsley and continue cooking on low for 30 minutes, stirring once. Serve over rice.
