Caramel Pie

If you're looking for an easy dessert to make ahead of time, this is a good one. It takes some time but the directions are simple. Making your own caramel with condensed milk is easy. Just make sure you keep checking your water level.


2 (14-ounce) cans sweetened condensed milk

1 (9-inch) prepared deep-dish pie shell

1 (8-ounce) container frozen nondairy whipped topping, thawed

1/2 cup chocolate curls

Garnish: chopped pecans


In a large pot, place unopened cans of condensed milk, and add enough water to completely cover cans. Bring to a boil over high heat, then reduce to a simmer. Simmer for 3 hours, adding water as necessary to keep cans covered.


Meanwhile, bake pie shell according to package directions; set aside to cool completely.


Carefully remove cans from water, and set aside until cool enough to handle. Open cans, and pour caramel into pie crust. Chill for one hour or up to overnight. Spread whipped topping over filling, and top with chocolate curls. Garnish with pecans, if desired.
