Blueberry Muffins

They say that breakfast is the most important meal of the day. While I feel that the most important meals are ones in which the entire family is gathered, breakfast does start your day.

Here are two ways to start your day.


1 1/2 cups all-purpose flour

3/4 cups sugar

1/2 teaspoon salt

2 teaspoons baking powder

1/3 cup canola oil

1 egg

1/3 cup milk

1 cup fresh blueberries

Crumb topping ( recipe follows)


Preheat oven ot 350℉. Grease jumbo muffin pan or line with muffin liners.


Combine flour, sugar, salt, and baking powder. Place canola oil into a 1 cup measuring cup; add egg and enough milk to fill cup. Mix this with the flour mixture. It will be very thick Fold in blueberries. Fill muffin cups to top; sprinkle with crumb topping mixture.

Bake until a cake tester comes out clean.


Crumb Topping


1/2 cup sugar

1/3 cup all-purpose flour

1/4 cup butter. cubed

1 1/2 teaspoons ground cinnamon



With a fork, mix together sugar, flour, butter, and cinnamon; sprinkle over muffins before baking.
