Spring is here. This week, I want to share two drink recipes from my first cookbook.
Absinthe is illegal in the United States. It is made from the wormwood plant, which was said to cause insanity and death. So, in New Orleans, they use Herbsaint or Pernod instead of Absinthe.
1 1/2 ounce Herbsaint or Pernod
1/2 ounce Simple Syrup
Place a highball glass in the freezer until very cold, at least 30 minutes. Fill the glass with cracked ice. Pour the Herbsaint and simple syrup over the ice and stir vigorously with a long-handled spoon until the glass begins to frost, about 1 minute. Serve immediately.
Simple Syrup
2 cups Sugar
2 cups Boiling Water
Place the sugar in a heatproof container. Add the boiling water and stir until dissolved. Let cool to room temperature. The cooled syrup will keep, refrigerated, in a jar or container for up to a month. This makes 2 cups.
