Satsumas are Louisiana’s best winter crop. They are best in the month of December. This week, I will share two quick sides using this local citrus.

6 Satsumas, peeled and sliced

1/2 cup Red Onions, thinly sliced

1/3 cup Extra-Virgin Olive Oil

Creole Seasoning

Layer satsuma and onion slices in a shallow serving dish. Drizzle with olive oil and sprinkle with Creole Seasoning.

Good Cooking, Good Eating and Good Living!!!

I lived in New Orleans, since birth, until Hurricane Katrina. I now live in Arkansas with my wife and our spoiled-rotten dog. I have been cooking since I was 8. My first cookbook, You can't keep New Orleans out of the cook, is now available at and most online bookstores. It is also available on Kindle and Nook.
