Louisiana is the third largest producer of rice in the US. It is a staple for every pantry. This week, I am sharing two rice based dishes.

3 cups cooked Long-grain White Rice, cooled

1/2 cup Celery, finely chopped

2 tablespoons fresh Parsley, finely chopped

1/2 cup Green Onions, finely chopped

1/4 cup Pecan Oil

1/4 cup Pimento-stuffed Green Olives, sliced

1 tablespoon Apple Cider Vinegar

1 tablespoon Creole Mustard

Salt, Pepper and Hot Sauce to taste

Toss all ingredients in a medium bowl, and refrigerate. Remove and let come to room temperature before serving.

Enjoy!!!

I lived in New Orleans, since birth, until Hurricane Katrina. I now live in Arkansas with my wife and our spoiled-rotten dog. I have been cooking since I was 8. My first cookbook, You can't keep New Orleans out of the cook, is now available at publishamerica.net and most online bookstores. It is also available on Kindle and Nook.
